Ingredients

For the Salmon Tacos

-8oz of atlantic salmon

Mrs. Dash Taco Seasoning 

-Cooking spray

-4 La Banderita Corn Tortillas 

-1 oz of pepperjack cheees

-OPTIONAL: any type of salsa, diced tomato, shredded lettuce for toppings

For the Avocado Lime Crema

-1/2 Hass avocado

-1 tbsp sour cream

-1/2 tablespoon of mayonnaise

-onion powder, garlic powder, salt, pepper

-fresh lime; or you can use lime juice and lime zest seasoning (fresh  lime is best!)


For the Salmon Tacos

Avocado Lime Crema Tacos- Quick Tips:

-You can use any type of cheese, it does not have to be pepperjack

-You can use a high-fiber tortilla in place of the corn tortillas, or you can skip the tortilla alltogether and just use the avocado lime crema on the seasoned fish

Step by Step Instructions For Avocado Lime Crema Tacos

STEP 1

First, preheat your oven to 400 degrees. After that, you will want to pat your salmon filets dry with a paper towel. This will ensure you get a nicer crust on the outsite in the oven. Next, take your taco seasoning and generously season your salmon. Make sure to coat all sides and areas of the fish. Lastly, take a baking sheet and line it with aluminum foil. Spray your cooking spray on the sheet and place your fish with the skin down (if there is no skin already, the flater side) Place it in the oven for about 15 minutes.

STEP 2

Next, let’s make the avocado lime crema! You will want a food processor or a small blender attachment works well too. Spoon in your avocado, squeeze your fresh lime, good amounts of onion powder, garlic, a little salt, and pepper too. Next measure out your mayo and sour cream and add them to the mix. Lastly, use a grater to zest your lime ( the outside skin of the lime) You do not have to do this but it adds to the flavor. Blend the ingredient mix until it is nice and creamy! Set this aside until you’re ready to eat.

STEP 3

After you have cooked the salmon for about 15 minutes in the oven, turn your oven up to broil and make sure your salmon is closer to the top. You want to get a nice little crust going! Only leave it on for no more than 5 minutes this way. Pay close attention to make sure it does not burn.

STEP 4

Lastly, prepare your chopped tomatoes, lettuce, and salsa for toppings. Once your salmon is done, make your two tacos inside the corn tortilla with the salmon, veggie toppings, optional salsa, and drizzle your avocado lime crema all over those bad boys! Enjoy =)
