`-1 can of drained and rinsed black beans

-4 cups of cooked brown rice

-1/2 cup of pesto sauce, store bought is fine We like the aldi Priano brand like this

-1 bag of cauliflower rice

Pesto Power Bowl- Quick Tips:

-Instead of beans, you could also use quinoa or lentils to swap out the grain or legume -You can totally use instant/minute rice for this, or those steamable bags. Just watch out for sodium content!

Step by Step Instructions for the Pesto Power Bowl


First, drain and rinse your beans. Next, take the beans and microwave for about 5 minutes. You can totally cook beans from their dry form, but we just wanted to keep things convenient! After that, cook your steamable cauliflower rice and brown rice as instructed on the bags. 


Lastly, combine your beans, rice, and cauliflower into a mixing bowl and spoon in your pesto sauce. Make sure it is mixed well, and enjoy hot!
