Ingredients

For the Chicken

-2 teaspoons olive oil
-1/2 pound boneless skinless chicken breasts 
-4 cloves garlic , minced
-1/2 cup yellow onion , chopped
1/2 teaspoon salt
-1/4 teaspoon freshly ground black pepper
-1 cup shredded carrot 
-1/2 cup shredded cabbage
-3 green onions , chopped

For the Sauce

-1/3 cup sweet chili sauce
-1 Tablespoon peanut butter 
-1/2 teaspoon freshly grated ginger (or ¼ teaspoon ground ginger)
-2 teaspoons low-sodium soy sauce
-1/4 cup fresh cilantro , chopped
-crushed red pepper flakes to taste
-1 head of lettuce, romaine is easiest to find

Step by Step Thai Lettuce Chicken Wraps

STEP 1

First. heat your olive oil in a large skillet over medium. Add the chicken, garlic, onions, salt and pepper and cook, flipping occasionally, until chicken is cooked through. Next, add the carrots, cabbage, and green onions, and cook for 2 more minutes. 

STEP 2

Next, while the chicken and veggies are finishing cooking, in a small bowl combine the sweet chili sauce, ginger, peanut butter, soy sauce, and crushed red pepper. Stir this until you get it nice and smooth. You will want to then slowly add the sauce to the pan. Add some chopped cilantro. toss everything until combined well. 

STEP 3

After you have combined everything in the pan, you will want to create little “boats,” of lettuce from your head of lettuce. Lastly, take your thai chicken and start spooning it into the lettuce wraps. Serve and enjoy!
