Ingredients

-1 lb of boneless, skinless chicken breast

-1 cup shredded cheese

-1 large bell pepper, any color works

-1 large white onion

-8 White/Yellow corn tortillas

-1/2 Cup plain greek yogurt

-4 tbsp light sour cream

-Taco seasoning, Cholula hot sauce, salsa of your choice, cilantro to top it!

-This pairs well with a southwest salad kit, or a side of chips and salsa/guac

-For another carb source add in some rice and beans as well

Step by Step Instructions 

STEP 1

Pre heat your oven to 425. Chop up our bell peppers and onion into small chunks. Keep your chicken breast whole, but flatten it out by smashing it down.

STEP 2

Season your chicken and veggies with a taco seasoning. Spray your deeper pan with cooking spray and add in your chicken and veggies.

STEP 3

Place your pan in the oven.

After about 15 minutes of cooking, take our your pan and use two forks to start pulling apart your chicken. Then add in your sour cream, most of your cheese, cholula hot sauce, and yogurt. Top of the dish with the rest of the cheese and then place back in the oven for about 5 minutes.

STEP 4

Take out of the oven and let cool for a couples minutes, then scoop your filling into the tortillas and enjoy!
